Organic Mexican-Style Potatoes with Beef and Baked Cheese

Ingredients

Base and Meat Filling:

  • 800 g young organic potatoes
  • 500 g organic ground beef
  • 250 ml tomato passata made from European tomatoes
  • 1 white onion
  • 2 garlic cloves
  • 150 g shredded European yellow cheese or mozzarella
  • Splash of olive oil or cooking oil for frying

For Serving and Garnish:

  • 4 tbsp thick European sour cream
  • ½ red onion (sliced into thin strips or rings)
  • ½ red bell pepper (finely diced)
  • 1 bunch fresh cilantro

Preparing

1. Thoroughly wash the young organic potatoes under running water and boil them whole with the skins on in salted water until tender.

2. Drain the cooked potatoes, transfer them to a baking dish, and gently crush them using your hand or a fork.

3. Heat a splash of oil in a skillet, add the chopped white onion and minced garlic, and sauté until translucent.

4. Add the ground beef to the skillet and cook over medium-high heat, breaking up the meat with a spatula until evenly browned.

5. Pour in the tomato passata and reduce over medium heat for a few minutes until the meat sauce thickens.

6. Spread the meat sauce evenly over the crushed potatoes and sprinkle generously with the shredded cheese.

7. Place the dish in an oven preheated to 200°C (400°F) and bake for about 15 minutes until the cheese is melted and golden brown.

8. Remove the hot casserole from the oven, top with dollops of thick sour cream, sprinkle with red onion rings, diced bell pepper, and fresh cilantro, and serve hot.
