Organic Tortilla Kebab Skewers with Homemade Dip

Ingredients

Tortilla Skewers:

  • 1 package organic wheat tortillas or lavash flatbreads made from European grains
  • 1 kg lean organic ground meat (e.g., beef or poultry)
  • 1 large European red bell pepper
  • 1 large European yellow bell pepper
  • 1 large onion
  • 1 bunch of fresh parsley
  • 1 tsp turmeric, garlic powder, sweet paprika, salt and freshly ground pepper
  • 200 g grated European mozzarella cheese

Garlic Dip:

  • 5 tbsp thick Greek yogurt
  • Garlic powder to taste
  • A pinch of finely chopped parsley

Preparing

1. Clean and very finely dice the red bell pepper, yellow bell pepper, and onion.

2. In a large bowl, thoroughly mix the ground meat with the diced vegetables, finely chopped parsley, turmeric, garlic powder, sweet paprika, salt, and pepper until a uniform mixture forms.

3. Lay out the first sheet of organic tortilla and spread a thin, even layer of the prepared meat and vegetable mixture over it, then sprinkle the top with grated mozzarella.

4. Cover with another tortilla sheet, spread the meat mixture again (you can leave this layer without cheese), and repeat the layering process: tortilla, meat, cheese, tortilla.

5. Using a sharp knife, cut the prepared layered stack into equal strips about 3–4 cm wide.

6. Fold each strip into an accordion shape or layer it vertically, piercing it through with a wooden skewer.

7. Place the finished skewers on a baking sheet lined with parchment paper.

8. Place the baking sheet in an oven preheated to 180–190°C and bake for about 25–30 minutes until the meat is fully cooked through and the edges of the tortillas become crispy and golden.

9. Meanwhile, in a small bowl, mix the Greek yogurt with the garlic powder and parsley to create a smooth dip.

10. Serve the hot baked skewers immediately accompanied by the chilled garlic dip.
