1. Preparing the meat: Take the steak out of the fridge about 30 minutes before cooking so it can reach room temperature. Pat it dry with a paper towel. Season with salt and pepper just before cooking.
2. Cooking: Heat a pan (preferably cast iron) until very hot. Add the oil, then place the steak in the pan. Cook for about 2–3 minutes on one side until a nicely browned, crispy crust forms. Flip and cook for another 2–3 minutes.
3. Basting: Toward the end of cooking, add the butter, garlic, and thyme. Spoon the melted butter over the steak for about 1 minute to infuse it with flavor.
4. Doneness guide:
Rare – about 2 minutes per side
Medium rare – about 2.5–3 minutes per side
Medium – about 3–4 minutes per side
5. Resting: Remove the steak from the pan and let it rest for 5 minutes so the juices can redistribute evenly.
6. Finishing: Sprinkle with a pinch of salt, garnish with fresh thyme, and serve immediately.
