Organic Cheese Patties with European Zucchini Ketchup

Ingredients

Cheese Patties:

  • 300 g cooked potatoes (mashed until smooth)
  • 100 g organic hard matured cheese from Europe
  • 100 g European cheddar cheese
  • 1 organic egg
  • 1–2 tbsp wheat flour from European grains
  • Handful of chopped fresh chives
  • Salt and pepper to taste
  • Clarified butter or oil for frying

Homemade Zucchini Ketchup:

  • 1 organic zucchini (grated)
  • 1 small onion
  • 3 tbsp tomato paste from European farms
  • 1 tbsp apple cider vinegar
  • 1 tsp cane sugar
  • Splash of water
  • Spices: ground mustard seed, sweet and hot paprika, salt

Preparing

1. Place the grated organic zucchini and finely chopped onion into a saucepan, pour in a splash of water, and simmer covered for about 7–10 minutes until the vegetables are completely soft.

2. Add the tomato paste, apple cider vinegar, sugar, and spices to the simmered vegetables. Cook uncovered over low heat until the sauce thickens significantly, then blend it into a smooth, velvet ketchup.

3. In a bowl, combine the mashed potatoes, both grated cheeses (cheddar and matured cheese), egg, flour, and chopped chives. Mix everything thoroughly and season with salt and pepper to taste.

4. Shape the mixture with your hands into small, slightly flattened patties.

5. Heat the fat in a pan and fry the patties over medium heat until golden brown on both sides—the cheese inside must melt perfectly and become beautifully gooey.

6. Place the hot, crispy cheese patties on plates and serve with a generous portion of the homemade zucchini ketchup.
