1. Wash the zucchini and cut lengthwise in half. Hollow them out in the middle and cut the removed mass into smaller pieces.
2. In a bowl, mix your meat, the pieces of zucchini, tomato paste, oregano, minced garlic (use a garlic press); add salt and pepper.
3. Put the hollowed-out zucchini on a baking tray lined with baking paper, brush with olive oil and stuff with meat stuffing. Sprinkle with half the Parmesan cheese.
4. Bake in an oven preheated to 200°C for about 25-30 minutes.
5. Serve sprinkled with Parmesan cheese and fresh parsley.
