1. Wash the chicken wings, pat dry with paper towels, and season with salt and pepper.
2. Heat the oil in a skillet. Fry the wings over medium heat until they are golden brown on all sides.
3. Pour the apple juice, soy sauce, and mirin into the skillet with the meat. Add the honey and a pinch of sesame seeds.
4. Cover the skillet with a lid and cook for 12 minutes to ensure the meat is tender.
5. Remove the lid and flip the wings. Increase the heat and continue to cook until the excess liquid evaporates and the sauce reduces into a thick, glossy glaze coating the meat.
6. Transfer the finished wings to a plate. Garnish generously with toasted sesame seeds, chopped cilantro, chives, and chili.
