Organic Zucchini Alfredo with Crispy Parmesan Chips

Ingredients

  • 2 young organic zucchinis
  • 150 ml heavy cream (30%, European)
  • 2 garlic cloves (finely chopped)
  • 1 small chili pepper (chopped)
  • ½ bunch fresh parsley (chopped)
  • Salt to taste
  • 1 tbsp butter or olive oil for frying
  • For garnish: a piece of European Parmesan cheese (for the crisp)

Preparing

1. Wash the organic zucchinis and slice them into long, thin "noodle" strands using a vegetable peeler or a spiralizer.

2. Heat a small, dry skillet over medium heat. Sprinkle a small round circle of grated Parmesan into the pan and cook for 2–3 minutes until melted, golden brown, and crisp. Set aside to cool and harden.

3. In a deep skillet, heat the butter or olive oil. Add the chopped garlic and chili pepper, sautéing briefly over medium heat (be careful not to burn the garlic).

4. Pour in the heavy cream, add a pinch of salt, and bring the sauce to a boil.

5. Once the sauce starts bubbling, add the zucchini noodles to the skillet.

6. Cook for exactly 1.5 minutes, stirring gently so the cream sauce evenly coats the zucchini strands.

7. Remove the skillet from the heat, toss in a generous handful of fresh parsley, and stir well.

8. Transfer the zucchini pasta to deep bowls and serve immediately, topped with the crispy Parmesan chips.
