One-Pan Apple & Cheddar Quesadilla

Ingredients

  • 2 large wheat or wholegrain tortillas
  • 1 large apple, thinly sliced
  • 1 cup grated cheddar cheese
  • 1 small red onion, thinly sliced
  • 1–2 teaspoons Dijon mustard
  • 1 teaspoon butter or olive oil
  • 1 teaspoon maple syrup or honey
  • A handful of arugula or baby spinach
  • A pinch of salt
  • A pinch of pepper

Preparing

1. Caramelize the onion: Heat the butter or olive oil in a large pan. Add the onion, a pinch of salt, and the maple syrup or honey. Cook for 6–8 minutes, until the onion softens and becomes lightly caramelized.

2. Assemble the quesadilla: Remove the onion from the pan. Spread a thin layer of Dijon mustard over one half of the tortilla, then add the cheddar, apple slices, caramelized onion, and a little arugula or baby spinach. Fold the other half of the tortilla over the filling.

3. Cook in one pan: Place the quesadilla in a dry pan and cook for 2–3 minutes on each side, until the tortilla is golden and crispy and the cheese has melted.

4. Serve: Cut into triangles and serve immediately — preferably with a yogurt dip, salsa, or an extra handful of arugula.
