Organic Halloween Cauliflower "Buffalo Blood Wings"

‍

Number of servings:

3

Preparation time:

35 minutes

Ingredients

Roasted Cauliflower:

  • 1 large organic cauliflower
  • 2–3 tbsp olive oil
  • Salt and freshly ground black pepper to taste

"Bloody" Beet-Chili Glaze:

  • 300 ml beet juice (100% cold-pressed, organic)
  • 2 generous tbsp tomato paste
  • 1–2 fresh chili peppers (finely chopped)
  • 2 tbsp natural honey

Preparing

1. Preheat the oven to 200°C (400°F).

2. Wash and dry the cauliflower, then divide it into neat, small florets.

3. Transfer the florets onto a baking sheet lined with parchment paper, drizzle with olive oil, season with salt and black pepper, and toss thoroughly by hand.

4. Bake in the preheated oven for about 20–25 minutes until the cauliflower is tender and the edges are nicely browned.

5. Meanwhile, prepare the glaze: in a small saucepan, combine the beet juice, tomato paste, finely chopped chili, and honey.

6. Simmer over low heat, stirring frequently, until the liquid evaporates and reduces into a thick, smooth, and glossy syrup with a deep burgundy color.

7. Transfer the roasted, hot cauliflower florets to a large bowl.

8. Pour the prepared "bloody" beet syrup over the cauliflower and toss gently until every floret is completely coated in the sweet-and-spicy glaze. Serve hot!
