Sauce:
1. Mix minced meat in a bowl with egg, oregano, season with salt and pepper.
2. Form 2 balls, flatten firmly and grill in a heated teaspoon of oil together with the eggplant slices. Towards the end of frying, place sliced mozzarella on top of the eggplant so that the cheese melts.
3. Squeeze the garlic through a press. Mix the ingredients for the sauce in a bowl, season with salt and pepper.
4. Cut buns in half, tomato and onion into thin slices. Spread the sauce on both sides of the rolls, place lettuce, tomato, chicken, eggplant with cheese, onion and arugula in order, cover with the top of the roll.
