Ingredients are Everything
The whole secret is in simplicity and quality, which is why I recommend organic flour—in a recipe with so few ingredients, it's what builds the entire flavor of the dough.
Ingredients:
- Organic all-purpose flour (Type "00" or 550): 500g
- Lukewarm water (around body temp, approx. 95°F / 35°C): 325ml
- Yeast: 10g fresh (or 3-4g dry)
- Salt: 10g
- Good olive oil: 30ml
How to Make It (Step-by-Step)
1. First, the yeast
Dissolve it in the lukewarm water. Let it sit for 5-10 minutes in peace, until you see it start to "work"—a light foam should appear on top.
2. Flour and salt
In a large bowl, mix the organic flour and salt.
3. All together
Pour the yeast water and olive oil into the flour. Mix everything with your hand or a fork, just until the ingredients come together and you don't see any dry flour.
4. Kneading
Turn the dough out onto a clean countertop. Now for the most important part: kneading. By hand, this will take about 10 minutes. If you have a stand mixer with a dough hook, about 6-7 minutes. The dough should be smooth, elastic, and springy to the touch.
5. Waiting
Form the dough into a ball, place it in a large bowl greased with a little olive oil (so it doesn't stick). Cover the bowl with plastic wrap or a clean kitchen towel and leave it in a warm place for about 90 minutes. It needs to double in size.
